My friend Jeanette sent me this recipe, and I just couldn’t stop myself from sharing it with you! It was so good and simple to make!
For the crust she used a basic fathead dough recipe, but I’ll include it here so you have everything in one place.
Jnet’s Low Carb Breakfast Pizza
2 cups of mozzerella cheese
3/4 cups almond four
2oz of cream cheese
1 egg, beaten
pinch of salt.
Put mozzarella & almond flour in a microwave safe bowl & mix together, throw the cream cheese on top. Microwave for 1 minute, then stir. Microwave for another 30 seconds. Stir again, then stir in the eggs. Put between 2 pieces of parchment paper and roll into a rectangle or circle–whatever your preference. Remove top piece of parchment paper, leaving the dough on the bottom piece, slide onto a cookie sheet and bake for 12 minutes (should be light golden brown).
3/4 cup heavy whipping cream
3/4 cup shredded parmesan cheese (not the green can)
salt and pepper to taste
Add both to a sauce pan and bring to a boil, then turn to a simmer, stiring constantly. Takes about five minutes.
Add sauce to the crust and your choice toppings. I used sausage, scrambled eggs, and white cheddar. I also topped it with chives and paprikia. Make it yours!
Bake for 8-10 minutes until cheese is melted and crust is golden brown and enjoy!
